Details - Hospitality, Sports, Leisure is the platform responsible for managing the Hospitality, Sports, and Leisure areas of Arrow Global in Portugal. It oversees the management of major hotel units located in Vilamoura, Carvoeiro, Lagos, Albufeira, Aroeira, and Madeira, as well as golf courses and equestrian centers.
The Head of F&B, who reports directly to the Corporate Director of F&B, is responsible for operating all F&B development projects in the universe of assets managed by Details, namely club houses, standalone units, special events venues, F&B retail and centralized food production.
Key Responsibilities:
- Implement and execute F&B strategic masterplan aligned with the company's vision and goals.
- Drive innovation in F&B concepts, menu design and service offerings across all venues and channels.
- Quantify and follow up on strategies with new business opportunities and partnerships within the F&B sector.
Operational Management:
- Oversee daily operations of clubhouses, stand alone restaurants, central kitchen and events venues, ensuring exceptional guest experiences, revenue and cost optimization.
- Coordinate and bridge activities between clubhouses, stand alone restaurants, events, hotels operations and the central kitchen to ensure seamless product delivery.
- Collaborate with marketing and commercial teams to identify and amplify F&B offers Explore White label kitchen program / delivery / home chef program for members
- Develop and manage budgets for operations under his direct responsibilities monitoring and maximizing profitability.
- Analyze financial data to drive cost-effective operations and identify growth strategies.
- Implement pricing strategies to optimize revenue across venues.
- Recruit, train, mentor, and develop a high-performing F&B team together with HR team
- Foster a culture of collaboration, creativity, and excellence within the team.
- Identify and execute productivity initiatives in order to keep productivity levels within scope.
- Lead by example in ensuring superior customer service throughout F&B operations.
- Develop and implement a system to maintain high standards of quality in food preparation, presentation, and service.
- Oversee the planning and execution of events, ensuring they meet clients' specifications and company standards.
- Oversee central kitchen operations together with executive chef, ensuring efficiency, consistency in food preparation and delivery.
- Implement systems for quality control and inventory management within the central kitchen.
- Increase operational purchasing synergy across the entire platform with strategic brand partnerships
- Stay updated with industry trends, integrating innovative ideas into the F&B offerings.
- Utilize customer feedback to continuously improve service and product offerings.
- Ensure compliance with health, safety, and industry regulations.
Key Qualifications:
- Bachelor's degree in hospitality, Culinary Arts, Business Administration, or related field.
- Extensive experience in managing multi-channel F&B operations within hospitality in different geographies
- Strong leadership abilities with proven experience in team management.
- Excellent financial acumen and experience in budgeting and revenue optimization.
- Exceptional communication and interpersonal skills.
- Ability to work under pressure and manage multiple projects simultaneously.
- Proficient in using F&B management software and tools.
