Our client is reference in the Hospitality & Leisure Industry and is looking for F&B Director to oversee all operations within the Resort/Complex.

Our client is looking for a Food & Beverage Director, who will be in charge of the Food & Beverage service operations, including all stand-alone restaurants within the company’s property.


Candidate Profile:

• Ensure that each outlet is accounted for separately as an individual profit centre.
• Ensure that each outlet is managed by a Manager/Management Team who are totally accountable for their profitability.
• Set, in close conjunction with each Outlet Manager, annual operating budgets which will form part of the Business Plan.
• Monitor all costs and recommend/institute measures to control them.
• Set and control with the CEO, CFO and Director of Human Resources, any incentive scheme for the Outlet Managers or other Food and Beverage Heads of Department.
• Ensure that the Department's Operational Budget is strictly adhered to.
• Ensure monthly forecasts are prepared.
People Management
• Ensure the manning is adequate to the department needs, defined by individual outlet, considering the service standards and the correct management of payroll cost.
• Define together with Restaurant/Outlet Manager the correct profile for each position on the team in order to get the performance needed.
• Ensure the departmental induction and training are completed accordingly to plan.
• Ensure all training needs are identified and communicated to HR to prepare the training plan.
• Discuss with direct reports their CDP (career development plan).
• Lead initiatives, with or without support of HR, to increase team’s engagement.

• Ensure that the various outlets adhere to all Company Policies and Procedures Standards.
• Represent the Food and Beverage department in the Company's Executive Committee.
• Ensure that all Departmental Operations Manuals are prepared and updated.
Guest Service
• Preserve excellent levels of internal and external customer service.
• Personally, and frequently verify that guests in the outlets are receiving the best possible service available.
• Spend time in the various outlets (during peak periods) to ensure that the operation is managed well by his Outlet Team and functions properly and to his fullest expectations.
• Identify customers’ needs and respond proactively to all their concerns.
• Be demanding and critical when it comes to service standards.
• Ensure that the Outlet Team projects professionalism; that employees are well trained in their jobs and are well-groomed and uniformed.

Food and Beverage Product
• Frequently verify that only fresh products are used in food preparation.
• Taste the food from various kitchens with the Chef and be demanding and critical when it comes to food quality.
• Encourage and help the Executive Chef to be creative and ensures that he operates well as a Production Manager.
• Ensure that employee food is as good as the restaurant food.
• Comply with all health and safety regulations.

• Prepare, along with his Outlet Teams, a yearly Marketing Plan for each outlet, which is the basis of the yearly business plan.
• Ensure that an effective marketing approach (Marketing Cycle) is applied to all Outlets in his Food and Beverage operation.
• Continuously seek ways to assist management in the outlet to maximize revenues and profit.
• Fully understand the market needs and desires for each outlet and ensure that the product lines (menus) are developed by the Outlet Management Team accordingly.

• Ensure that all Food and Beverage forms and reports to be forwarded to the Area Food and Beverage Department are submitted properly.
• Maintain all Company records and forms as prescribed by local Company management and policies.
• Always be up to date with financial results (budget versus actual) in sales and cost areas and ensure that sales and profit are maximized.
• Control expenses wisely.
• Ensure that deadlines on all projects are met.
• Ensure that he schedules himself to be available and on duty during peak periods (frequently opening and closing the operation).
• Feel confident in leaving the operation for a period of time due to the qualified employees he has developed, and who are able to make their own decisions.
• Ensure that meetings are well planned and result orientated.
• Conduct frequent and thorough inspections of the Food and Beverage operation (at least once a month).

Executive Duties
• Act as Duty Manager for the Company as scheduled.

• Respond to changes in the Food and Beverage Department as dictated by the company.


Education and Professional Experience:
• Culinary school diploma or degree in Food service management
• Proven food and beverage management experience

Courses and Certifications Professionals:

• Working knowledge of various computer software programs (MS Office, restaurant management software, POS)
• Ability to spot and resolve problems efficiently
• Mastery in delegating multiple tasks
• Communication and leadership skills
• Up to date with food and beverages trends and best practices
• Ability to manage personnel and meet financial targets
• Guest oriented and service minded
• Be able to plan ahead (is pro-active; instead of reactive).
