About Club Lusitano, Hong Kong
Club Lusitano is a Portuguese private members’ boutique social club situated in Central, Hong Kong, one of the world’s most vibrant and multifaceted cities. The club has remained a constant home of the small but active Portuguese community since its founding in December, 1866, making it one of Hong Kong’s oldest social members’ clubs.
The clubhouse offers three dining outlets and several banqueting venues, serving Portuguese, Macanese and international dishes. Facilities include a Pastelaria, fine dining restaurant, lounge and bar, wine cellar and ballroom that can accommodate up to 80 persons for full dining.

Club Lusitano is seeking a dynamic Executive Chef passionate in Portuguese cuisine and with an appreciation of Portuguese-influenced and Asian dishes such those from Macau to join our management team. The successful candidate will be responsible for kitchen operations leading a culinary team of 14 multi-national talents.


Descrição da Função

Responsibilities include-
• Responsible for the day-to-day operations of the Culinary Department that includes planning and direct food preparation for all culinary activities occurring at the club.
• Menu management consistent with the values and objectives of the club.
• Maintain high standard of quality control and consistency of dishes
• Responsible for budgeting and food/labour costs.
• Supervise kitchen operations.
• Rectify arising problems, complaints or feedbacks.
• Establish and maintain good relationships between suppliers and vendors (in Hong Kong, Macau and Portugal) to ensure the procurement of quality ingredients at competitive prices.
• Inventory management.
• Preparation of monthly Operation Reports and other analysis reports as and when required.
• Ensure compliance with nutrition and sanitation regulations and safety standards.
• Perform any other duties as assigned.


Perfil do Candidato

Requirements:
• Familiar with Portuguese cuisine; Macanese food an advantage.
• Minimum 7 years of experience in a leadership role within the restaurant, hospitality industry or similar.
• Experience in managing entire Kitchen with multi-outlets and event operations.
• Ability to manage budgets and control costs.
• To lead by example, manage and facilitate team cohesiveness.
• Ability to adapt to a fast-paced, ever-changing environment and work under pressure.
• Strong organizational skills with ability to multi-task.
• Good communication and interpersonal skills.
• Willingness to work flexible hours including evenings and weekends according to operational needs.
• Portuguese language an advantage.


Oferta

We offer an attractive remuneration package and other benefits, such as:
• Arrangement of employment visa (if candidate is not a Hong Kong resident)
• Competitive salary (range HK$45,000 to HK$55,000 per month)
• Annual bonus at the discretion of the Club
• 15 days annual leave upon appointment, 18 days upon completion of first year
• Medical insurance
• Mandatory Provident Fund contribution
• 5.5 work days per week (49 hours per week)
